Usually served with rice but is also delicious to be eaten with French baguette or bread. Chicken curry is often served during birthday and wedding celebrations in Singapore, and it is widely loved by many as it is almost a must-have at any gathering!

How to Turn Premix Spice Blend Into A Paste

Using a mortar and pestle or food processor, pound or blend 200g of chopped onions with 200ml water and 130g spice blend to achieve 530g of spice paste.

530g of spice paste serves to flavour approximately 2.5kg- 3kg of chicken.

Store freshly made Nonya Chicken Curry paste frozen, thawed spice paste to be cooked within a week.

 

A Guide on How to Cook Nonya Chicken Curry for 6 – 8 pax

Prepare:

260g Nonya Chicken Curry paste

6 tbsp cooking oil

1.2kg-1.5kg chicken marinated with 2 heaped tbsp of Curry Powder Singapura

600g potato chunks

800ml water

250ml coconut cream

 

Directions:

1. On medium-low heat, stir-fry spice paste with cooking oil for 15 mins.

2. Add chicken and stir-fry for 5 mins.

3. Add potatoes and water to cook.

4. When chicken is cooked, stir in coconut cream.

5. Turn off the heat after curry comes to a boil.

6. Allow the curry to rest for at least 30 mins. Reheat curry prior to serving.

Best served with rice or noodles.
