Sambal Prawn is a savoury, spicy and piquant side dish often served as an accompaniment to spice up any rice meal. A must-try for the spicy seafood lovers! A little goes a long way because the sauce is often the star of the dish and not really the prawns. It packs a punch of flavours and the gravy is best when drizzled on a serving of steaming hot rice!

How to Turn Premix Spice Blend Into A Paste

Using a mortar and pestle or food processor, pound or blend 260g of chopped onions with 120ml water and 150g spice blend to achieve 530g of spice paste.

530g of spice paste serves to flavour approximately 2.5kg-3kg of prawns.

Store freshly made Sambal Prawn paste frozen, thawed spice paste to be cooked within a week.

A Guide on How to Cook Sambal Prawn For 6-8 pax

Prepare:

260g Sambal Prawn Paste

1.2kg-1.5kg prawn or any seafood

6 tbsp cooking oil

2-4 tbsp tomato ketchup or tomato puree

200ml water

sugar to taste

 

Directions:

1. On medium-low heat, stir-fry spice paste with cooking oil for 15 mins.

2. Add water and tomato ketchup.

3. Add in the prawns.

4. Stir-fry till prawns are cooked.

5. Add sugar to taste.

Best enjoyed with rice.
