BBQ Seafood is a Singapore Hawker dish whereby fish meat or assorted shellfish such as clams is slathered with a chilli paste called sambal, wrapped in banana leaves to seal in the moisture, and grilled until the skin is crispy. Squeeze over some calamansi before eating and dip in fresh chinchalok to complete the barbeque seafood experience.

Ingredients: Chili, Garlic, Ginger, Turmeric, Candlenut, Raw Sugar, Himalayan Pink Salt, Coriander, Fennel, Cumin, Fenugreek, Cardamom, Black Pepper.

How to Turn Premix Spice Blend Into A Paste

Using a mortar and pestle or food processor, pound or blend 260g of chopped onions with 120ml water and 150g of spice blend to achieve 530g of spice paste.

530g of spice paste serves to flavour approximately 1.2kg-1.5kg of fish or any seafood.

Store freshly made BBQ Seafood paste frozen, thawed spice paste to be cooked within a week.

A Guide on How to Prepare BBQ Seafood Dishes

Prepare:

260g BBQ Seafood paste

700g fish/seafood

6 tbsp cooking oil

2 tbsp sugar

1 lime

banana leaf/aluminium foil

Directions:

1. On medium-low heat, stir-fry spice paste with cooking oil for 15mins.

2. Add sugar to taste.

3. Spread chilli sauce on fish or any seafood of your choice.

4. Wrap with aluminium foil or banana leaf to bake or grill.

5. Open it up once it is cooked, best served by squeezing some lime.
