Green Szechuan Peppercorns, sometimes known as green Szechuan berry is not to be mistaken as a pepper. At first slightly pungent, like black pepper, it then produces a numbing sensation in the mouth. Green Szechuan Peppercorns are harvested before they are fully ripe. It is therefore more acidic than red Szechuan Peppercorns. It is most often used lightly crushed, or pan-fried for 1 to 2 minutes before being ground. It is generally added to food at the last minute, to prevent excessive slow cooking from spoiling the subtle flavours. They are best paired with seafood, fish and vegetables.
